First Course
Roasted Tomato Basil Bisque Soup with a Garlic Parmesan Crostini.
Paired with 2005 Chardonnay, A round, luscious Chardonnay classically styled to befriend a wide variety of foods
as well as to be enjoyed on its own.  It is crisp and refreshing with tastes of mango, ample oak and acid.

Second Course
Strawberry and Blue Cheese Salad with fresh Spring Greens, Candied Walnuts & Yellow Bell Pepper with
Champagne Vinaigrette Dressing.
Paired with 2005 Pinot Noir, Wolff Vineyard, Edna Valley, Dark garnet in color with bright strawberry/cherry fruit.  It
is fresh and lively, well extracted, nicely balanced.  An elegant Pinot Noir that is concentrated, fruity and delicious,
soft and seductive with a long, luscious finish.

Third Course
Café recipe, Blackened center cut King Salmon filet with Pinot Noir reduction sauce, Roasted Red Pepper
Polenta, served with a Latin Spiced Chayote Slaw.
Paired with 2004 Pinot Noir Reserve, Aubaine Vineyards, Brilliant, dark ruby color with bright strawberry/cranberry
fruits.  It has deep rich flavors, that are nicely balanced with acid, oak and fruit with a long finish.  A delicious and
seductive Pinot Noir that is rich, round and elegant.

Fourth Course
Decadent Fudge Brownie Chocolate Mousse topped with Whipped Cream & Fresh Raspberrys.
Paired with 2000 Cabernet Sauvignon, Made from Santa Barbara County grapes, this Cab is a rich wine, well
balanced and complex.
